Banana Muffins:(I altered the Lion House Banana Nut Bread Recipe)
5 large bananas
1 c applesauce (or you can use 3/4 c oil and 1 more banana)
4 eggs
2 c sugar
4 c flour
1 tsp baking soda
2 tsp salt
2 tsp baking powder
3/4 c oats
Mix together. Pour into greased muffin tins, sprinkle with more oats (opt) and bake at 325 for 25-30 min. This recipe makes a lot: 18 muffins and 2 small loaves of bread. I ended up freezing a lot.
Chilly Day Chili(I got this recipe from a lady in my ward - it has won 2 chili cook - offs)
2 med onions - chopped (I leave these out because I think they smell like B.O.)
1 Green Pepper Chopped
2 T Veg Oil
2 Lbs gr. Beef (I usually do a little less and add more veggies and beans)
2-3 T Chili powder (choose how hot you like it)
1 can (14 1/2 oz) diced tomatoes
1 can (15 oz) tomato sauce
1/2 c ketchup
1 tsp salt
1/4 tsp pepper
2 cans (15 1/2 oz) red Kidney beans partially drained
In large pan saute onions and green pepper in oil until tender. Add beef, brown, drain excess fat. Stir in Chili powder, then add tomatoes, tomato sauce, ketchup, salt, and pepper. Simmer 30 minutes. Add beans, simmer another 15 minutes.
